Salmon and Avocado Salsa
1 ripe avocado
1 roma tomato
1 tbs olive oil
1 small onion
1 lime
1 bunch cilantro
2 tsp pepper
1 can tomato and green chilies
1 tsp chili powder
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
4 salmon filets
Directions:
Salsa- chop avocado, onion and tomato- do not whip, add squirt of lime juice and place aside
Salmon- place olive oil in pan and bring to medium/low heat. Season salmon with chili powder, salt, peppers and powders- add to pan cover and cook for 2 minutes, then add the can of tomato and green chilies. Cover again. Cook until Salmon is to your liking.
Remove from pan and cover with juice, tomato’s from pan. Top with Salsa and squirt with a dash of lime juice and place a few cilantro sprigs on top.
