Swiss Steak
1/2 cup flour
1 tsp salt
1/2 tsp pepper
2 pounds round steak
2 tbs Olive oil
2 cups sliced onion
1 can whole tomatoes
1/2 cup water
1/2 tsp thyme leaves
1 bay leaf
8 medium red potatoes, peeled

Directions: Combine flour, salt and pepper in a shallow dish.  Coat both sides with flour mix.  Pound flour into meat.  Heat oil in skillet and add meat.  Brown on both sides adding onions during last 2- 3 minutes.  Add tomatoes with liquid, water, thyme and bay leaf.  Bring to a boil.  Reduce heat and simmer 1 hour and 15 minutes.  Turn meat over and add potatoes.  Simmer until meat and potatoes are tender.  Remove and pour sauce over- serve.
