Tuna and Bernaise Sauce w/Capers

2 Tuna steaks
2 tsp salt
2 tsp garlic
½ can diced Italian style tomatoes
3 tbsp. white wine
1 tbsp. white vinegar
2 tsp. tarragon, chopped
2 tsp. shallots or scallions, chopped
1/4 tsp. ground black pepper
1/2 c. butter
3 egg yolks
2 tbsp. lemon juice
1 tbs water
1/4 tsp. salt
Pinch cayenne pepper

Directions:  Season Tuna Steaks with Salt, garlic powder and rub with olive oil.  Place on grill for 2 minutes each side.
Sauce: Combine wine, vinegar, tarragon, shallots and pepper in saucepan; bring ingredients to a boil and cook rapidly until almost all the liquid disappears. Whisk in egg yolks over medium heat and water.  Whisk until thick.  Add butter, lemon juice and seasoning – cook to desired thickness. Add tomatoes and capers and stir.  Serve over Tuna steaks.
