Turkey & Spinach Lasagna Rollups
1 package lasagna noodles
1 pkg frozen spinach
1 lb ground turkey
1 small onion chopped
1 tbs olive oil
1 tbs garlic powder
1 garlic glove chopped
1 tbs fresh basil
1 can diced tomatoes
1 can tomato sauce
1 can tomato paste
1 container ricotta cheese
1 cup grated parmesan cheese
1 egg
1 pkg mozzarella shredded mozzarella cheese
Directions: Preheat oven to 400 degrees. Cook noodles according to package directions. Mix spinach, ricotta cheese, parmesan cheese, 1/tbs basil, 1 egg in small mixing bowl. Add olive oil to large skillet and sauté onion; add turkey meat and ˝ seasonings. Cook meat mix thoroughly. In a small saucepan add tomatoes, paste and sauce. Season with remaining seasoning and simmer on low. Take a lasagna noodle and spread ricotta cheese mix over noodle, top with meat and sauce, roll up. Continue until noodles are all rolled. Spray medium baking dish with cooking spray and add rollups. Top with remaining sauce and cover with ˝ mozzarella cheese. Bake 30 minutes and top with remaining mozzarella cheese- cook an additional 5 minutes. Serve
